Latest News - FEb 8th 2013

Well its almost Valentines Day, a time of year when most people's minds drift toward chocolate even more so than usual. To help with that we have scheduled an unprecedented three days of tastings at Cook Culture. As always they are free to attend and as always run from 11am to 2 pm. Each day will feature over 20 new and different bars from our ever expanding line up. That's over 60 new chocolates to try if you attend all three which should be enough to satisfy even the most hardcore chocolate addict. Many new bars to purchase but most of these are very limited in availability. As our display space is pretty maxed out most of the bars we are importing now only show up at the Open House tastings and sell out that day.

Cook Culture Open House Dates:

  • Saturday February 9th

  • Wednesday February 13th

  • Thursday February 14th

Here's what to look forward to:

Two new bars from Dandelion in San Francisco. We've been out of stock of these amazing bars for quite a while now but chocolate geniuses Todd, Cam and Alice finally have some new products for us. Very impressive stuff as always.

Also, two brand new creations from Missouri's Shawn Askinosie. A new dark milk bar sourced from Davao plantation in the Phillipines and infused with Fleur de Sel and goats milk. Plus the latest in their CollaBARation series the contents of which we'll reveal on Saturday. If you have been a fan of their Intelligensia Coffee, Lakritsfabriken Licorice or Jenni's Ice Cream Malted Milk bars this new one will blow you away.

More new bars from Mast Brothers!! Last tasting we tried their gorgeous bar from Chuao in Venezuela and the new Stumptown Coffee bar. Now we have in the Vanilla & Smoke bar from Papua New Guinea, the Crown Maple bar sweetened with New England Maple syrup instead of sugar and an incredible Almond and Sea Salt bar that has to be tasted to be believed. It's Paige's current fave at the moment.

Yet more new stuff from Joseph Zotter in Austria. Our BIG BIG Zotter order is still in transit but a few advance bars have trickled in. We tried some last tasting and we'll do a few more on Saturday.

Lots more surprises as well including four new bars from Adam Dick & Dustin Taylor in Arcata California. Those of you who are fans of the Dominican bar we've had from them in the past will be thrilled to hear that it is coming back plus new bars sourced from Madagascar, Belize, Ecuador and a version of the Dominican bar infused with Organic Turkish Figs. Yum!

Check out their new website as the front picture pretty much says all you need to know about these two guys. After Rick and Michael Mast they are two of the most gifted yet wacko personalities working in chocolate today. Great fun to party with though....

The legendary El Ciebo Heritage Beans bar is headed back as well – only 3000 made per year and we are very fortunate to be getting 24 of them. One of the most compelling and exotic tasting bars ever made.

Very excited to be getting a shipment of chocolate from Marou.

This is an amazing bean to bar project started by two Frenchmen living in Vietnam. They source beans from a number of great local growers and make single-plantation bars.

A full selection of single plantation bars from New York State's Tocoti Chocolates is on its way too. We've been following this little company for a while now and their latest bars are truly world class. Really excited to finally have some on their way to us.

Read more about them at www.tocoti.com

Also, we've been following a tiny bean to bar maker in Asheville North Carolina called French Broad (its the name of a nearby river, not some reference to Brigitte Bardot) and will finally feature their first ever releases. They started out as a small cafe and chocolate store and still carry many fine bars from US artisanal producers. Now, after years of experimentation they have their own line of bars and the results are pretty impressive. Great web site on which you'll see many familiar bars as their taste is clearly quite similar to ours!

And that's just a hint of what's coming up............

For those of you with chocolate questions we have a new e-mail address that is set up to handle bar requests and inquiries, plus anything you'd care to know about the world of artisanal chocolate. Write us at Info@preservationfoods.ca

and we will answer promptly. Also works for questions about our canning business, farm markets and canned product availability.

P.S. - David Mincey and his partner Paige Robinson, founders of Camille's Restaurant, are the local foodies behind Preservation Foods. Our full retail line-up of artisan bars and bulk chocolate can be found at Cook Culture in the Atrium building at Yates and Blanshard but a selection of our bars are also carried at Niagra Grocery, Origin Bakery at Stadacona Centre and Origin Bakery in Colwood, Habit Coffee, Leka Designs on Fort, People's Pharmacy on Shelbourne, Muffet & Louisa in Sidney, 2% Jazz Coffee in the Hudson and Silk Road Tea Co. in Chinatown.
